Savory cheesecake with black bread and salmon cream

Ingredients
125 g mascarpone cheese Sterilgarda
175 g fresh ricotta cheese Sterilgarda
130 g black bread
100 g smoked salmon
40 g butter
1 scorze lime
q.b. marjoram
q.b. salt
q.b. black pepper
Preparation
  1. Cut the black bread into thin slices and spread with butter. Grate the zest of half a lime on top.
  2. In the meantime, take a bowl and a fine mesh strainer and sift the Sterilgarda ricotta to make it creamier. Add the Sterilgarda mascarpone and mix well.
  3. Take the salmon, cut 4 strips and keep aside; reduce the remainder into strips and add them to the ricotta and mascarpone cream.
  4. Add the marjoram and mix well, season with salt and pepper and transfer the mixture into a piping bag.
  5. Spread the mixture obtained on the slices of bread, leveling well with a spoon.
  6. Decorate with the 4 strips of salmon rolled up to make little roses, a marjoram leaf and the remaining grated lime zest.
