Salmon rolls with yogurt sauce

Ingredients
200 g smoked salmon
8 slices ​​scamorza
2 big carrots
1 cucchiai olio extravergine d'oliva
salt
black pepper in grains
200 g low-fat white yogurt
1 lemons
1 tablespoon chopped chives
Preparation
  1. Grate the carrots into a bowl.
  2. Season with extra virgin olive oil, a pinch of salt and a grind of pepper and mix well.
  3. Lay out the salmon slices on a flat surface, place a slice of scamorza on top of each one and top with a small pile of carrots.
  4. Roll the salmon to form roulades.
  5. Prepare the sauce: put the Sterilgarda yogurt in a bowl and season with extra virgin olive oil, a pinch of salt, lemon juice and chives.
  6. Mix all the ingredients well and let the sauce rest for a few minutes.
  7. Place two slices of scamorza on the bottom of each plate and place two rolls on top, accompanying them with the yogurt sauce.
