Mini light burgers with vegetables and ricotta

Ingredients
320 g fresh ricotta cheese Sterilgarda
320 g potatoes
160 g zucchini
160 g onion
160 g carrot
140 g breadcrumbs
to taste nutmeg
to taste 00 flour
to taste parsley
to taste extra virgin olive oil
to taste table salt
to taste black pepper
Preparation
  1. Peel the potatoes, carrots, onions and remove the ends of the courgettes.
  2. Wash the vegetables and chop them roughly.
  3. Boil the vegetables in a pan with cold water, cook them over medium heat for about 20 minutes from boiling.
  4. Once the vegetables are cooked, drain them very well and pour them into the mincer.
  5. Chop the vegetables without making them too fine and transfer them to a large bowl.
  6. Add the Ricotta Sterilgarda, the breadcrumbs, the nutmeg, the chopped parsley, the flour, the extra virgin olive oil, the salt and the pepper.
  7. Mix everything well with a spoon and with your hands (or with the appropriate mold) form small burgers of 5 centimeters in diameter, placing them on a baking tray lined with baking paper.
  8. Bake the burgers in a preheated oven at 175 degrees and cook in fan-assisted mode for 20 minutes.
  9. Once baked, serve hot or cold as desired.
