SAGE FRIED IN MILK BATTER

Ingredients
40 leaves fresh sage
200 mL Sterilgarda microfiltered whole milk
100 g 00 flour
q.b. salt
q.b. seed oil
Preparation
  1. Wash the sage leaves under plenty of cold running water and then dry them on a tray lined with absorbent paper.
  2. Pour the flour into a bowl and add the Sterilgarda milk a little at a time, mixing with a whisk.
  3. Continue mixing until the batter is smooth and free of lumps; add salt to taste.
  4. Dip the sage leaves in the batter until completely coated.
  5. Fry in plenty of hot seed oil until golden.
  6. Remove them from the oil and let them dry on absorbent paper.
  7. Season with salt and serve.
