Ingredients
200 g | smoked salmon |
8 slices | scamorza |
2 | big carrots |
1 cucchiai | olio extravergine d'oliva |
salt | |
black pepper in grains | |
200 g | low-fat white yogurt |
1 | lemons |
1 tablespoon | chopped chives |
Preparation
- Grate the carrots into a bowl.
- Season with extra virgin olive oil, a pinch of salt and a grind of pepper and mix well.
- Lay out the salmon slices on a flat surface, place a slice of scamorza on top of each one and top with a small pile of carrots.
- Roll the salmon to form roulades.
- Prepare the sauce: put the Sterilgarda yogurt in a bowl and season with extra virgin olive oil, a pinch of salt, lemon juice and chives.
- Mix all the ingredients well and let the sauce rest for a few minutes.
- Place two slices of scamorza on the bottom of each plate and place two rolls on top, accompanying them with the yogurt sauce.
