SQUID IN TOMATO SAUCE

Ingredients
4 already cleaned squid
0.5 bicchieri white wine
500 g tomato passata Sterilgarda
2 cloves garlic
1 ciuffetti parsley
2 tablespoon olive oil
35 g capers in oil
q.b. salt
q.b. pepper
Preparation
  1. Wash and clean the squid by cutting the body into rings and the tentacles into small pieces;
  2. In a non-stick pan, heat the oil and fry the garlic: then add the squid and brown for about 3 minutes;
  3. Blend with the white wine and, once the alcohol has evaporated, add the Sterilgarda tomato puree and the capers;
  4. After 6-7 minutes of cooking, season with salt and pepper and add the chopped parsley.
  5. Continue preparing for another 10 minutes or so;
  6. Once ready, serve the calamari with sauce piping hot!
  7. It is recommended to enjoy the dish accompanied with warm bread.
